The Commons Hotel Minneapolis and its brand new restaurant the Beacon Public House, a gastro-pub setting featuring superior regional cuisine and reinvented classic cocktails, welcome acclaimed Executive Chef Roly Cruz-Taura. In this role, Chef Roly will oversee food and beverage for the restaurant, in-room dining, and group and social catering events. As a Certified Executive Chef and member of the American Culinary Federation, Chef Roly is known for actively enhancing and diversifying the selection of cuisines in order to compliment an array of likings.

Miami-native Chef Roly graduated from Florida International University with a degree in Hospitality Management and boasts extensive experience in the industry. He has served as the executive chef in several prominent restaurants, including the Biltmore in Coral Gables, Hotel Mayfair House  in Coconut Grove, the exclusive Miami City Club and KILINKERE in Dublin, Ireland. In 1999, Chef Roly joined CamFam, Inc., holding the position of corporate executive chef for its 8-unit seafood restaurant chain, Cami’s, in Miami. In 2001, he received his certification from the United States Sommelier Association and, in 2004, launched his first solo act – FIFTY Restaurant & Lounge in Miami, featuring cuisine with a combination of classic American fare, presented in a contemporary style with dishes influenced by a variety of cultures and countries that found their way to the American table.

Chef Roly’s cuisine has garnered a number of glowing reviews from several publications such as the Miami New Times, which proclaimed, “Put simply, FIFTY is the best food on Ocean Drive,” and from the Miami Herald, which called FIFTY “A true South Beach rarity.”  
 
Recently opened in November, the sense of nostalgia evoked by the Commons Hotel is brought to life as the Beacon Public House gets back to basics with natural, simple and flavorful food. The Beacon supports local and regional purveyors featuring farm staples and peak season products, in addition to working with local suppliers when out of season to source the very best and most fresh products.

Signature dishes featuring regional ingredients include Elk River Venison Satay hibachi grilled and served with a spicy peanut sauce; Smoked Fischer Farms Ham Hock Nachos topped with cheddar, pepperoncini, and kalamata olives; Brick Roasted Wild Acres Half Chicken served with fingerling potatoes and succulent pan jus; and Northern Lights Blue Cheese Baked Dates adorned in a brandy glaze and topped with almonds.

The Beacon Public House is set to be one of the hottest spots to see and be seen in Minneapolis, with engaging weekly programs to bring out the inner geek, including Weekly Words with Friends Wine Hour and Retro Bar Bingo.
